Melt in the Mouth Cookies Recipe

These cookies mimic the delicious, chocolate chip Millie's cookies... so good. This recipe is based off a BBC Good Food one, with a few tweaks :)

  • 125g softened butter
  • 100g light brown soft sugar
  • 125g caster sugar
  • 1 egg, lightly beaten
  • 1tsp vanilla extract
  • 225g self-raising flour
  • 1/2tsp salt
  • 200g chocolate
They are so simple to make, and fairly mess free...
  • Preheat the oven to gas mark 4 or 180 degrees 
  • Cream the sugars and butter together
  • Add the egg and vanilla extract
  • Fold in the flour and salt
  • I like to chop the chocolate into different sized chunks. I make sure to leave lots of larger pieces so you end up with glorious puddles of melted chocolate
  • Add the chocolate and then you have your cookie dough!
  • Use your hands to make little walnut sized balls of dough
  • I put them on a metal baking tray covered in non-greased baking paper (they will expand, so space them out reasonably well)
  • How long you bake the cookies for depends on your oven and personal taste. If you want them to be gooey, cook them for around 10 minutes, before they turn golden. They may seem too soft, but leave them for a few moments and they'll still be gooey, but they'll hold their shape :)
After the first batch of cookies, I put the rest of the dough into the fridge to cook in a couple of days. It'll freeze too!
