How to bake... Vanilla Cupcakes with Buttercream Icing

These cupcakes are so delicious and cute. Perfect for when you're craving a sugar hit! Here's how to make them...

  • 110 g/ 4 oz butter/margarine, softened
  • 110 g/ 4 oz caster sugar
  • 2 eggs, lightly beaten
  • 1 tsp vanilla extract
  • 110 g/ 4 oz self raising flour
  • 1 - 2 tbsp milk
      For the buttercream icing
  • 140 g/ 5 oz butter, softened
  • 280 g/ 10 oz icing sugar
  • 1 - 2 tbsp milk
(Hundreds & Thousands are optional!)

1) Preheat the oven to 180C/350F/Gas mark 4 and line a 12 - hole muffin/cupcake tin with paper cases. 

2) Cream the butter and sugar together in a bowl until fluffy and light. Beat in the eggs a little at a time and stir in the vanilla extract.

3) Using a metal spoon, fold in the flour, adding a little milk until the mixture is of a dropping consistency. Spoon the mixture into the paper cases until they are about half full. You may have some mixture left over, in which case you can cook two batches of cakes. :)

4) Bake in the oven for 10 - 15 minutes, or until golden-brown on top and a skewer inserted into one of cupcakes comes out clean. Cool on a wire rack.

5) To make the buttercream icing, beat the butter in a large bowl until soft. Add half the icing sugar and continue to beat until smooth.

6) Add the remaining icing sugar with one tablespoon of milk, adding more if needed, until the mixture is smooth and creamy.

7) Spread the buttercream onto the cupcakes (I like the be generous with it!) and if you want to add a bit of fun and colour, sprinkle on Hundreds & Thousands! :)

Wishlist #2

Some things that I would very much like to have...

1 - Asos Chelsea Boots, 2 - Zara bag, 3 - New Look jeans, 4 - New Look shoes, 5 - H&M top, 6 - Paperchase Pass Case

Another thing I would very much like to have is a job, I want one so badly! Then maybe I could afford these lovely things! Oh well, the job hunt continues...

1) I keep on fantasising about owning a pair of these Chelsea boots ,I think they would be fab for sixth form and the colder months. I also love how they are so simple to slip on and off :)

2) After buying 4 big notebooks for school, I beginning to worry that my satchel won't be big enough for some school days. This Zara bag would accommodate everything nicely. I love the smartness of it too. 

3) New Look is really impressing me at the moment! Every time I go in, several lovely things catch my eye. These burgundy jeans would be especially great for Autumn and are very similar to the Topshop Leigh Jeans, but at a much cheaper price :D They also have a gorgeous green version. 

4) I like the look of these slipper/loafer shoes because the front tab part comes quite high up the foot, which is good for me as I have ridiculously thin feet and finding flats that fit properly is a nightmare! 

5) I'm beginning to stress about not having enough tops for sixth form... which is a pretty good reason for me to buy this ombre/colour block top! I don't have anything like it and I think it would be perfect for days when I don't feel like thinking about my outfit too much. 

6) And finally, I think this pass case from Paperchase is absolutely adorable! I have a bus pass, and the case is literally falling apart (I am getting good at thinking of reasons to buy things!), and this case is just so pretty! ;)

Back to School Bags!

Which bag to choose for school?! There's so many different styles of bags out there, and if you have to wear a school uniform, your bag can be the only way to express your personal style.

One thing I've learnt from twelve years of education, is that school bags NEED to be durable. It's so annoying to be having to buy a new bag every month because your previous one ripped under the strain of a whole bookshelf worth books! Also, I think it's brilliant if you have a bag that you are happy to use all the time, not just for school. 

I bought a Scaramanga leather satchel two years ago and it's still going strong. It's such a classic, timeless design that goes with pretty much anything, and being leather, it's incredibly strong and waterproof. I use it for school and whenever else I feel like using it (which is a lot of the time!), it was an excellent investment and has worked out to be serious value for money. 

Backpacks are another fab choice for school. They are rather trendy at the moment, and they are extremely practical as well of course :) School bags can get VERY heavy, and distributing their colossal weight over both shoulders is a lot more comfortable for many people. I adore this Herschel backpack, it's a perfect size and looks great. There's a load of pattern backpacks around at the moment, however I think a solid colour, or simpler design will work a lot better for a school bag, as it will go with more and has less chance of going out of fashion the week after you buy it!

I absolutely love these Longchamp Le Pliage large tote bags. They come in a huge variety of colours, and are such a gorgeous, ageless design. As well as being wonderful for school (lots of room for books etc), they are ideal for using for any occasion, meaning you'll definitely get your moneys worth out of it!

Family Lunch

Today my family and I (not just parents and brother... grandparents, aunts, uncles - the whole lot!) went to a bistro kind of pub for lunch to celebrate a few birthdays. I wanted to make an effort, but not look out of place, so I opted for my trusty grey skirt and paired it with my new purple shirt. It was boiling today! Sitting in a pub garden in direct sunlight was quite a challenge, although a slice of banoffee pie took my mind of it! ;)

How to make...

Chocolate biscuit fridge cake!

My Mom and I fancied indulging in a chocolatey treat and opted for this delicious and easy cake, and I'm going to show you how to make it yourself! :)

  • 110 g/ 4 oz butter/margarine
  • 2 tablespoons of golden syrup
  • 2 tablespoons of castor/soft brown sugar
  • 4 tablespoons of cocoa powder
  • 225 g/ 8 oz rich tea/digestive biscuits
  • 225 g/ 8 oz chocolate (whatever kind you like)
  • 1 handful of raisins (optional)

Ignore the cabbage... 
1) Melt the butter/marg, golden syrup, sugar and cocoa powder together in a pan.

2) Crush the biscuits into mainly crumbs, but leave some small chunks and add to the melted ingredients.

3) Add the raisins and press into an approx 9 inches x 9 inches square shaped tin.

4) Melt the chocolate by putting a little water into a pan over the heat, with the chocolate in a bowl on top. Try not to let the bowl touch the water.

5) Spread the chocolate over the cake and place in the fridge for it to set, this should take a couple of hours :)

6) Enjoy your tasty treat! :D

I love reading blogs and watching YouTube videos and thought I'd give it a go myself! Also, I love writing and always used to make pretend magazines when I was little and in a way, I find it kind of similar to blogging!

Listening to music and just joking around with my friends and family

Hmmm, this is a hard one... maybe Maybelline and Soap & Glory's make up range is pretty good :)

I use a face wash and I moisturise everyday, as well as that I exfoliate my face a couple of times a week

11) What would you describe your personal style as?
Wow, this is tricky! I guess a lot of the time I like wearing collared shirts, so kind of preppy, but also, I like to think that sometimes I go for an "urban bohemian" look, but that just sounds hilariously ridiculous so that's this question done! ;)

I love pasta and potato so maybe carbohydrates, however I love cake and sweets too!

I have a lot! But a favourite one is of going on "adventures" with my cousin (and my brother if he fancied joining us) at a relatives old house in the middle of the countryside :)

A vintage locket my parents bought me a couple of years ago

Miley Cyrus! Her style is amazing :)

omg this is tough! Maybe my laptop, or my camera, do they count as material items?! Or maybe my satchel...  arghhh I don't know!

I'm not too sure... the New York accent is pretty cool

A beautifully cut, real leather jacket

8) Where is your dream place to live?
Falmouth or New York

I've sort of already answered this, so I'll think of another thing I like doing... I enjoy walking haha!

Day Trip - Wiltshire

On Thursday, my parents and I went on a "spur of the moment" trip to the lovely county of Wiltshire. We spent the vast majority of the day in the ancient, picturesque village of Lacock.

Lacock is home to Lacock Abbey, an amazing building, half of it is still in a fairly original state and the other half is converted into a charming country house. 

How crazy is this plant?!

I thought this old wallpaper was so pretty!

I got slightly excited when I found out that some Harry Potter scenes were filmed in the Abbey and in the village!! How cool is that?! 

Henry Fox Talbot, a hugely influential photography pioneer, lived in Lacock and there was a great little museum about him. There was loads of awesome old cameras and examples of early forms of photography.

We also went to a National Trust garden, it was huge! Not to mention absolutely beautiful.

Do you find these bushes funny or it is just me?!

I really liked the look of Wiltshire, it's a county I haven't explored much. My Mom and I fancy going to Bradford On Avon, we passed through it in the car and it looked gorgeous. Hopefully we'll go there soon - most likely on the train, my Mom adores trains!
